Food irradiation has been acommercially viable postharvest technology fornearly 50 years (the actual idea of usingionizing radiation to extend the shelf-life offoods is over a century old), yet it has beenused only occasionally and sporadically.Interviews with reporters and the sources theyused at a Louisiana newspaper and a Floridanewspaper uncovered three cultural spherespresent in the debate over this post harvesttechnology – food, science/technology, andjournalism. Each of these spheres were pointsof contention for reporters and sources, andthis has had an (...) affect on the adoption of thetechnology among those involved in the foodindustry. Interviews with both reporters andthe individuals they relied on as sourceselucidate how different issues encompassedwithin different cultural spheres have beenlinked to this post harvest technology, andhave been used to help shape this debate. Thesecultural spheres offer various groups power tocontrol relations with reporters, though thatpower can be usurped by others, including thereporters themselves. Interviews with reportersand their sourses may help us understand howthe values attached to cultural spheres aremobilized by various groups to make sense of acontroversial topic, and how those groups gainentrance to public arenas and are then able tomaintain their presence. Food irradiation is a physical method of processing food (e.g. freezing, canning). It has been thoroughly researched over the last four decades and is recognized as a safe and wholesome method. It has the potential both of disinfesting dried food to reduce storage losses and disinfesting fruits and vegetables to meet quarantine requirements for export trade. Low doses of irradiation inhibit spoilage losses due to sprouting of root and tuber crops. Food- borne diseases due (...) to contamination by pathogenic microorganisms and parasites of meat, poultry, fish, fishery products and spices are on the increase. Irradiation of these solid foods can decontaminate them of pathogenic organisms and thus provide safe food to the consumer. Irradiation can successfully replace the fumigation treatment of cocoa beans and coffee beans and disinfest dried fish, dates, dried fruits, etc. One of the most important advantages of food irradiation processing is that it is a coldprocess which does not significantly alter physico-chemical characters of the treated product. It can be applied to food after its final packaging. Similar to other physical processes of food processing, (e.g. canning, freezing), irradiation is a capital intensive process. Thus, adequate product volume must be made available in order to maximize the use of the facility and minimize the unit cost of treatment. Lack of harmonization of regulations among the countries which have approved irradiated foods hampers the introduction of this technique for international trade. Action at the international level has to be taken in order to remedy this situation. One of the important limitations of food irradiation processing is its slow acceptance by consumers, due inter alia to a perceived association with radioactivity. The food industry tends to be reluctant to use the technology in view of uncertainties regarding consumer acceptance of treated foods. Several market testing and consumer acceptance studies have been carried out on food irradiation in recent years. These studies showed that, if the safety and the benefits of food irradiation were properly explained, the consumers were willing to accept irradiated foods. Considering its potential role in the reduction of post-harvest losses, providing safe supply of food and overcoming quarantine barriers, food irradiation has received wider government approvals during the last decade. There is also a trend towards increased commercialization of irradiated food. Currently, there are 47 irradiation facilities in some 23 countries being used for treating foods for commercial purposes. (shrink)

Recent evidence from studies on DNA repair systems that are implicated in accelerated aging syndromes, have revealed a mechanism through which low levels of persistent damage might exert beneficial effects for both cancer prevention and longevity assurance. Beneficial effects of adaptive responses to low doses of insults that in higher concentrations show adverse effects are generally referred to as hormesis. There are numerous examples of hormetic effects ranging from mild stresses of irradiation to heat stress, hypergravity, pro‐oxidants, or (...) class='Hi'>food restriction. Although the notion of hormesis is supported by many observations in various organisms, at least two major caveats have thus far prevented the application of hormesis for disease prevention in humans. First, the very nature of hormesis using toxins as a treatment regimen harbors the inherent danger of detrimental consequences. Second, the molecular mechanisms through which insults might exert beneficial effects have thus far remained elusive. Individuals use their capacity for autonomy to express preferences regarding food choices. Food choices are fundamental, universal, and reflect a diversity of interests and cultural preferences. Traditionally, autonomy is cast in only epistemic terms, and the social and political dimension of it, where autonomy obstruction tends to arise, is omitted. This reflects problematic limits in the Cartesian notion of the individual. Because this notion ignores context and embodiment, the external and internal constraints on autonomy that extend from social (...) location are not considered. Therefore, reconceptions of the individual and autonomy which emphasize social location and relational interdependency are needed. To combat autonomy obstruction, individuals can appeal to community and community autonomy as a social mechanism. Communities are social groups characterized by people living in places with shared goals. Recognizing their interdependency, individuals can organize as communities in order to accomplish objectives that they cannot on their own. While community autonomy is valuable unto itself, it can also enhance individual autonomy. (shrink)

The meaning of matter is determined by our interpretations. Even food has its own frequencies, which can be aligned with the specific notes of a musical scale. When presented with a dish we might ask not only “how does it taste?” but also “how does it sound?.” Gastrofonia is defined not as the musical accompaniment to a cooking demonstration, but the actual sound of it: music is made by food. Built upon an experiment initiated by John Cage to (...) try to make music with objects, gastrofonia examines sound as a possible connection among the visual and material arts. Combining music with taste, musician Roy Paci identified a biosonic perception of food. This chapter aims to analyze the case of gastrofonia in light of the increased scientific and artistic interest in food characterizing our contemporary society, that is, an orthorexic society where food has become a specific form of language, a communicative vehicle through which we express our identity, interests, social-ethical choices, and new concepts of art. From a sociosemiotic perspective, the gastrofonic dish is an example of a textual polyphonic discourse combining different languages, related to the five senses in a performance that becomes a form of shared communication. Expectations in the form of promises and concerns contribute to the sense-making and valuation of emerging nanotechnologies. They add up to what we call ‘de facto assessments’ of novel socio-technical options. We explore how de facto assessments of nanotechnologies differ in the application domains of water and food by examining promises and concerns, and their relations in scientific discourse. We suggest that domain characteristics such as prior experiences with emerging technologies, specific discursive repertoires and user-producer relationships, play a key (...) role in framing expectations of nanotechnology-enabled options. The article concludes by suggesting that domain-specific discourses may lead to undesirable lock-ins into specific de facto assessments pre-structuring anticipatory strategies of actors. (shrink)

Despite much popular interest in food issues, there remains a lack of social justice in the American agrifood system, as evidenced by prevalent hunger and obesity in low-income populations and exploitation of farmworkers. While many consumers and alternative agrifood organizations express interest in and support social justice goals, the incorporation of these goals into on-the-ground alternatives is often tenuous. Academics have an important role in calling out social justice issues and developing the critical thinking skills that can redress inequality (...) in the agrifood system. Academics can challenge ideological categories of inquiry and problem definition, include justice factors in defining research problems, and develop participatory, problem-solving research within social justice movements. In addition, scholars can educate students about the power of epistemologies, discourse, and ideology, thereby expanding the limits and boundaries of what is possible in transforming the agrifood system. In these ways, the academy can be a key player in the creation of a diverse agrifood movement that embraces the discourse of social justice. (shrink)

Diabetes contributes to COVID‐19 deaths in Colombia and Mexico, where the latter having the highest prevalence of diabetes among OECD countries. Some reports consider that advertising influences diabetes by confusing labels on ultra‐processed foods and soft drinks that lead to unhealthy food choices. Both countries are in the process of modifying their labeling legislation; however, governments and food industries have pushed to delay its implementation. Using a mixed research design, we interviewed 550 consumers in both countries during June–July (...) 2020; a high number of respondents misunderstand today's food labeling and are unaware of the new labeling legislation. Respondents strongly agree that the food industry should be in charge of changing the labels; otherwise, they would consider not buying their products. Using cluster analysis, we identified three groups that would help design public policies, nutritional and educational campaigns. Although changes in food labeling alone are not enough to reduce obesity and diabetes rates, food labels constitute public health tools due they assist consumers to make food and nutritional choices (considering that nutrition can help prevent and overcome COVID‐19). The costs of maintaining current labels could increase Colombians and Mexicans illnesss and poverty. These deceptive practices of the food industry would harm their brands. (shrink)

ArgumentDuring the first half of the 1970s, climate research gained a new significance and began to be perceived within political and academic circles as being worthy of public support. Conventional explanations for this increased status include a series of climate anomalies that generated awareness and heightened concern over the potentially devastating effects of climate change. Controversial climatologist Reid Bryson was one of the first to publicly promote what he saw as a definitive link between these climate anomalies and unidirectional climate (...) change in the fall of 1973, and rising food prices in the same year gave him a platform on which to air his views to receptive senior members of the US Congress. Bryson’s testimony before a US Senate subcommittee offers a unique glimpse into how he was able to successfully resonate his agenda with that of senior politicians in a time of crisis, as well as the immediate responses of those senior US politicians upon first hearing climate change arguments. Bryson was one of the most prominent US climatologists to break a taboo against making bold climatological predictions and de-facto policy recommendations in public. As a result, although Bryson was criticized by many in the climatological community, his actions instigated the involvement of other scientists in the public arena, leading to an important elevation in US public climate discourse. Online food retail has the potential to broaden access to systems of food provision which promote social and environmental quality attributes. This possibility is explored using data from a survey of 365 consumers who purchased food either via internet retailers of local and organic food, or via farmers’ markets, in Vancouver, Canada and Melbourne, Australia. Survey results are analyzed using principal component and regression techniques and interpreted via the theoretical framework of conventions theory. Key findings show (...) that while online retailers of local organic food are not currently attracting more resource constrained consumers, they do appeal to a similar, although broader, array of quality conventions. This research provides new insights into the challenges and opportunities associated with increasing consumer access to alternative food networks, as well as adding to the small number of quantitative studies in the conventions theory literature. Offering organic food is a new trend in the hospitality industry seeking sustainable competitiveness. Premiums and information barriers impede continued growth in organic consumption. This study aims to explore the role of comparative advertising in organic food communication. Three empirical studies were used to verify the effect of CA vs. non-comparative advertising on consumers’ willingness to pay a premium for organic food, examining how benefit appeals and consumers’ organic skepticism affects CA. The results indicate that matching CA (...) and health appeals increase consumers’ WTPP, while environmental appeals have no significant differences between the CA and NCA groups. Information persuasiveness mediates the interaction between CA and benefit appeal on WTPP. CA increases WTPP among consumers with high organic skepticism, while the interaction between CA and health appeal is only effective for low skepticism consumers. The findings unravel and explain the mechanics of how CA works in organic products, which can help restaurants, retailers and tourist destinations advertise organic food to increase consumers’ WTPP. Food safety has become a major development challenge and a key influence on the strategic behavior of food companies. The study seeks to analyze the effect of perceived institutional pressures on the governance of food safety and the effect this may have on food safety performance in emerging food supply chains. The research develops a conceptual framework that links perceived institutional pressures, degree of food manufacturer-supplier relationships, food safety practices, and food safety (...) output. The hypothesized relationships were tested in the Middle Eastern context, where food safety concerns are rising. Accordingly, a survey was carried out to collect data from food quality/safety managers representing 94 food processors across Lebanon. The study finds that perceived institutional pressures have a direct and strong effect on the degree of integration in the agro-food supply chain, and such an integration, in turn, increases the intensity of food safety practices and food safety performance. However, in the absence of strong manufacturer-supplier relationships, perceived institutional pressures do not lead to improved food safety performance. The study suggests that long-term food manufacturer-supplier relationship is necessary if agro-food chain actors are to respond to established regulatory demands, industry practices, and social norms. Credibility is particularly important in organic food systems because there are only marginal visual and sensorial differences between organic and conventionally produced products, requiring consumers to trust in producers’ quality claims. In this article I explore what challenges the credibility of organic food systems and I explore how credibility of organic food systems can be maintained, using the Danish organic food system as a case study. The question is increasingly relevant as the sale of organic (...) class='Hi'>food is growing in Denmark as well as globally, and consumers’ expectations of organics continuously evolve. The inquiry is threefold, first I outline a conceptual framework for understanding trust and credibility in the food system, secondly I explore the developments in Danish organic food systems and thirdly discuss the challenges and opportunities for maintaining trust in the Danish organic food system. In the analysis I indicate eight key challenges: unrealistic expectations, blind trust and little motivation for extending their knowledge, consumers assess the overall credibility of organic products, ambitious ethical principles, new consumer groups introduce new expectations, frozen requirements in a changing world, growing imports and labelling and multiple versions of organics and the diversity is growing, as well as four aspects which may maintain the credibility of organics if implemented: coordinate expectations, communicate requested information, institutional reform and open communication of pros and cons of organic production. Local food systems can have economic and social benefits by providing income for producers and improving community connections. Ongoing global climate change and the acute COVID-19 pandemic crisis have shown the importance of building equity and resilience in local food systems. We interviewed ten stakeholders from organizations and institutions in a U.S. midwestern city exploring views on past, current, and future conditions to address the following two objectives: 1) Assess how local food system equity and resilience were (...) impacted by the COVID-19 pandemic, and 2) Examine how policy and behavior changes could support greater equity and resilience within urban local food systems. We used the Community Capitals Framework to organize interviewees’ responses for qualitative analyses of equity and resilience. Four types of community capital were emphasized by stakeholders: cultural and social, natural, and political capital. Participants stated that the local food system in this city is small; more weaknesses in food access, land access, and governance were described than were strengths in both pre- and post-pandemic conditions. Stakeholder responses also reflected lack of equity and resilience in the local food system, which was most pronounced for cultural and social, natural and political capitals. However, local producers’ resilience during the pandemic, which we categorized as human capital, was a notable strength. An improved future food system could incorporate changes in infrastructure (e.g., food processing), markets (e.g., values-based markets) and cultural values (e.g., valuing local food through connections between local producers and consumers). These insights could inform policy and enhance community initiatives and behavior changes to build more equitable and resilient local food systems in urban areas throughout the U.S. Midwest. Food quality is an important issue on the global agenda, particularly in high- and middle-income economies, but of little concern in designing Mexico’s food policy. Food policy has focused on quantity and in the case of maize, on satisfying domestic demand by supporting large commercial agriculture and importing from abroad. However, and as argued in this paper, obtaining a food staple of quality is also an important issue for rural households and contributes to motivating continued smallholder (...) production. Based on case studies in the rural district of Atlacomulco, in the state of Mexico, as well as in two regions of the state of Chiapas, this paper analyzes the production and consumption strategies of rural households. We focus on goals of food security and quality and note differential trends among households of varying characteristics and local contexts. We find that the motivation of small-scale producers to grow maize should be supported by Mexico’s food policy. (shrink)
